In a bowl suitable for a bain-marie, beat 2 whole eggs and 2 yolks with 100g of sugar
- Sponge:
- - 4 eggs
- - 120 g of sugar
- - 30 g flour
- (vanilla or vanilla sugar)
- Raspberry Mousse:
- - 600 g raspberry coulis
- - 225 g of sugar
- - 5 sheets of gelatine
- - 225 g whipping cream
- Plain mousse:
- - 225 g of whipping cream, whisked into whipped cream (x2) with icing sugar or white chocolate.
- Decoration:
- - 1 punnet of fresh raspberries
- Meringue:
- - 4 egg whites
- - 250 g of sugar
Pistachio, raspberry and white chocolate cake

The sponge: Separate the whites from the yolks
- Ingredients for the sponge:
- 3 eggs
- 50g cornflour
- 30g flour
- 120g caster sugar
- 1 tbsp pistachio paste
- Ingredients for the white chocolate mousse:
- 200g white chocolate
- 3 egg whites
- 300 ml of whole single cream
- 187g of milk
- 30g sugar
- 3g agar agar (a rounded teaspoon)
- Ingredients for raspberry jelly:
- About 200 ml of raspberry sauce (bought or homemade)
- 1/4 teaspoon of agar agar
- Whole unsalted pistachios
- 200g unsalted blanched pistachios
- 250g raspberries
WHITE CHOCOLATE & VANILLA MOUSSE

Transfer the nuts to a food processor and pulse until they are finely chopped
- 1/2 cup shelled pistachio nuts
- 7 ounces (good quality,) white chocolate, chopped
- 2/3 cup heavy cream
- 1 teaspoon either vanilla bean paste, a whole vanilla bean or pure vanilla extract
- 2/3 cup plain yogurt
- 4 egg whites
- powdered sugar for dusting

- 4 ounces white chocolate, broken up
- ¼ cup whole milk
- 2 tablespoons light corn syrup
- ½ cup whipping cream
- Toasted slivered almonds or fresh raspberries (for garnish)
