- 400g digestives
- 65g Stork (or other baking spread)
- 411g jar lemon curd
- 2 large egg whites
- 125g caster sugar

- Meringue:
- 4 Egg whites
- 1/2 tsp Vanilla
- 1/4 tsp Cream of tartar
- 6 tbsp Sugar
- Lemon Filling:
- 2 tbsp Cornflower
- 100g Golden caster sugar
- 3 Lemon zests finely grated
- 3 Lemons juice
- 1 Small orange juice of
- 85g Butter cut into small pieces
- 4 Egg yolks & 1 whole egg
