Caesar salad with potatoes, salami and chitterlings

Place the garlic, raw egg, lemon juice, mustard and parmesan in the bowl of an electric blender
- 24 thin slices dry salami sausage,
- 12 thin slices chitterlings, cooked
- 3 sucrine lettuce,
- 4 new potatoes,
- 3 vine tomatoes,
- 1 large carrot,
- 8 marinated artichoke hearts,
- 2 tbsp pine nuts.
- For the sauce:
- 1 clove garlic, peeled
- 1 egg,
- 2 tbsp of lemon juice,
- 5 tsp of Dijon mustard,
- 4 tbsp of olive oil,
- 30 g Parmesan,
- salt and pepper.
Muffins with sun-dried tomatoes and thym

* Preheat the oven to 200 °
- For 12 muffins
- 50 g sun dried tomatoes (without oil), chopped
- 300 gr of flour
- 3 eggs
- 130 gr butter, softened
- 200 gr cottage cheese
- 15 cl of milk
- 1 sachet baking powder
- 100 gr grated Comté cheese
- 3 tablespoons thyme

Remove all the bones from the rabbit
- Ingredients:
- 1 rabbit
- 1/3 of the weight of the rabbit (without the bones) in fresh pork (unsmoked bacon).
- Seasoning for 2kg of meat:
- 1 cup of shallots
- 1 bunch of parsley
- 40g of salt
- 5g pepper
- 1 - 2 glasses of white wine (to moisten the mixture).

Finely chop the flesh of the trout with a knife and refrigerate

- - 150g. thin slices of Brési beef (or viande des grisons)
