Cinnamon swirl banana bread

Preheat oven to 170c. Butter and line a loaf pan
- 3 over-ripe mashed bananas
- 1/3 cup melted butter
- 3/4 cup sugar
- 1 egg - beaten
- 1 tsp vanilla
- 1 tsp baking soda
- dash of salt
- 1 1/2 cups flour
- For the swirl:
- 1/3 cup sugar
- 1 Tbs cinnamon

Mix the yeas with the lukewarm milk and sugar and let it sit for a few minutes while the yeast bubbles and foams up
- Dough:
- 300g flour
- 1/2 tsp salt
- 125ml lukewarm water
- 7g active dry yeast
- 30g melted butter
- 1 egg yolk
- 1 tbsp sugar
- Filling:
- 50g softened butter
- 4-5 tbsp sugar
- 3 tsp cinnamon
