- 3 very ripe bananas
- 170g (6oz) (just) melted butter
- 1 tsp bicarbonate of soda in 1tbsp water
- 170g (6oz) brown sugar
- 1 egg (room temperature)
- 255-285g (9 oz-10oz) plain flour
- 1 tsp. cinnamon

- 2 medium bananas, the riper the better, and a great way to use up the ones no one wants to eat.
