Oven-baked sponge cake
- 6 eggs (room temperature)
- 100g self-raising flour
- 1/4 tp baking powder
- 1/4 tp salt
- 200g sugar
- 1tp vanilla extract
- 2tp water
- some lemon/orange zest
- 3/4 tp vinegar/lemon juice

Separate the eggs into egg yolks and egg whites.
Preheat oven to 180oC.
In a bowl, add in sifted flour,salt and baking powder. Mix well.
In another bowl, add in egg yolks and 135g sugar. Beat until light, fluffy and thick.
Add vanilla extract, water and lemon/orange zest. Mix for a few minutes.
In another bowl, beat the egg whites until foamy. Add in vinegar/lemon juice. Beat until soft.
Gradually add 65g sugar into the egg mixture while stirring. Beat until light and shiny.
To the egg yolk batter, mix in the flour 1/3 at a time and mix well. Then, add in the egg white batter 1/3 at a time and mix well.
Greese the pan and pour in the batter.
Bake for 25-35min. Cool for at least an hour before serving.
Can serve with whipped cream, fruits and dusting with icing sugar.
