Egg potato crisps


A very quick breakfast or brunch recipe which involves potato crisps and eggs

  • 4 Eggs
  • salt and pepper for seasoning
  • Oil for frying

Step 1

Peel the potatoes and slice into thin circular shapes resembling crisps

Step 2

Pour oil into the frying pan and place 5 or 6 circular disc potato crisps in a circle overlapping eachother

Step 3

crack an egg on top of the overlapping potato circles

Step 4

Fry until the egg is cooked to preference

Step 5

Repeat for the remainder of the eggs

Serve with tomato sauce or mushy peas with mint sauce
Try baking in the oven for a crispy finish
