Preparation
Step 1
Steam cook 500 grams of potatoes without peeling; then peel them and then cut them into slices or cubes.
Step 2
Fry them in 30g of butter and 1 tablespoon of olive oil, when they are golden, prepare and cook an omelette with 8 eggs
Step 3
When it is cooked, stuff it with the potatoes, close the omelette by folding in half and place on a hot dish.
Step 4
Sprinkle with chopped parsley.
