A warming winter pudding
- 1 lb stewed fruit with sugar to taste
- 2 oz margarine or butter
- 4 oz flour (plain or self-raising)
- 3-4 oz sugar

Prepare the fruit. With firm fruits, simmer until nearly
tender and add a little water and sugar to taste, the mixture must be fairly firm. With soft fruits, there is no need to pre-cook or soften them.
Place the fruit into an oven proof dish.
Rub the margarine or butter into the flour, add sugar and mix. Sprinkle over the top of the fruit and press the mix down firmly.
Bake at 190°C for 30 - 40 minutes until crisp and golden brown.
For a healthier topping, replace half the flour and half the butter with 2oz porridge oats.
