  • Dough:
  • 450g flour
  • 30g yeast
  • 2 cups lukewarm milk
  • 50g butter
  • 50g sugar
  • 1 egg
  • pinch of salt
  • Filling:
  • 200g butter
  • 200g sugar
  • 3 eggs
  • 1kg quark
  • 40g corn starch
  • pinch of salt
  • peel from lemon
  • Streusel:
  • 350g flour
  • 200g sugar
  • pinch of salt
  • pinch of ground cinnamon
  • 200g butter

Preparation

Step 1

Sieve the flour into a large mixing bowl. Create a hollow in the centre of the flour and add the yeast, a little of the sugar and milk, then mix together with a little of the flour. Cover with a clean tea towel and leave to rise for 15 minutes.

Step 2

Add the eggs, the sugar, the butter, the rest of the milk and the pinch of salt into the bowl and work everything into a dough. Cover again and leave to rise for a further 15 minutes.

Step 3

For the filling, mix the butter and the sugar until it foams, then add all the remaining ingredients of the filling and mix thoroughly.

Step 4

Roll out the dough, place it onto a greased baking tray and then cover the dough with the filling.

Step 5

For the Streusel, add all the ingredients except for the butter to a clean bowl. Melt the butter and while stirring, drip it into the bowl little by little. Use your hands to rub this mixture into fairly large individual lumps (Streusel).

Step 6

Scatter the Streusel over the top of the filling. Then allow the cake to rise for a final time (15 minutes).

Step 7

Bake the cake for 20-25 minutes in an oven pre-heated at 210°C.
