Ingredients

  • 500g flour
  • 30 yeast
  • 250l lukewarm milk
  • 80g butter
  • 2 eggs
  • 50g sugar
  • 0.5tsp salt
  • 1.5kg plums
  • 175g flour
  • 100g sugar
  • 0.5 pack vanilla sugar
  • 100g butter
  • 0.5tsp ground cinnamon

Preparation

Step 1

Sieve the flour into a large mixing bowl. Create a hollow in the centre of the flour and add the yeast and a little milk. Mix in just a little of the flour from the centre, then cover with a clean tea towel and leave to stand for 15 minutes.

Step 2

Add 80g of butter, the eggs, 50g of sugar and the salt and knead these ingredients along with the yeast mixture and the remaining flour from the bowl into a dry dough. Cover and allow to rise for a further 15 minutes.

Step 3

Wash the plums, quarter them along their length and remove the stone.

Step 4

Roll out the dough to the size required to cover your baking tray. Grease your tray and place the dough onto it. Using a fork, pierce the base numerous times.

Step 5

Arrange the plums in tightly packed rows onto the dough. Each row should overlap with the previous one (see photo).

Step 6

For the Streusel, add the remaining ingredients (flour, sugar, vanilla sugar, butter and cinnamon) to a clean mixing bowl. Melt the butter prior to adding it to the bowl. Then rub the ingredients together with your fingers to create large lumps (Streusel). Scatter the Streusel over the plums.

Step 7

Bake the cake for 20 to 30 minutes in an oven pre-heated at 200°C. Allow to cool before serving.
