Scotch Eggs

Ingredients
- 4 Medium Eggs - Hard Boiled and shelled
- 8 thick sausages of your choice
- 1/2 pack of sage and onion stuffing made up as per packet instructions
- 2 slices of white or wholemeal bread made into fine breadcrumbs
- Salt and pepper to season and any other spices you choose.
- 25g Flour
- 1 medium Egg

Preparation
Step 1
Skin sausages. Mix together with stuffing and divide into 4 equal portions
Step 2
Wrap sausagemeat mix around eggs and wrap in cling film. Chill for approximately 30 mins
Step 3
mix together breadcrumbs, salt and pepper and spices of your choice
Step 4
Preheat deep fat fryer
Step 5
Take eggs out of fridge and dip in flour then egg then breadcrumbs. Repeat a second time missing out the flour step.
Step 6
Fry scotch eggs two at a time for approx 15 mins or until sausagemeat is cooked and the eggs are a golden brown.
Step 7
Drain on kitchen paper and allow to cool slightly before serving
Great warm or cold as a snack or as part of a main course with salad and potato salad
