Bread & Butter Pudding

  • 2oz butter
  • 6 slices of bread
  • 2oz currants
  • 2oz sultanas
  • 1oz mixed nuts chopped
  • 2 eggs lightly beaten
  • 2oz caster sugar
  • 1/2 tsp vanilla essence
  • 1/2 pt milk

Step 1

Remove crusts from bread, butter slices and cut in half diagonally

Step 2

Place fruit and nuts between layers of bread in a suitable dish

Step 3

Mix eggs, sugar and essence together and add the milk gradually, pour over the bowl

Step 4

Soak the bread in egg and milk mixture fora couple of hours before cooking

Step 5

Bake until bread is crispy and golden brown

Step 6

Cook at 170 degrees for 45-55mins

You can vary the fruit mix, leave out nuts, replace nuts with 1oz of either sultanas, raisins or currants
