  • 2 Ciabatta bread rolls
  • 2 chicken breasts
  • 2 balls of mozzarella
  • 2 slices smoked bacon
  • 6 mushrooms
  • 1 red onion
  • 1/2 red pepper
  • Green pesto
  • enough for spreading
  • 2 handfuls of rocket
  • Mayo
  • enough for spreading
  • Oil for cooking

Step 1

Butterfly your chicken breasts
Heat oil in a non stick frying pan on a medium heat
Fry chicken breasts,turning once, colouring both sides and ensuring they are fully cooked thru
Whilst the chicken breasts are cooking,grill your bacon under a medium heat to desired crispiness
Slice onion, mushrooms and pepper.
Remove the chicken breasts from the pan and keep warm under the grill.
Fry your onion, mushrooms and pepper
Slice the Ciabatta and toast both sides.
Spread the pesto on the bottom half of Ciabatta
Place chicken breast onto this slice and layer slices of mozzarella on top, place under the grill until melted
Then stack your sarnie starting with the chicken,pesto and mozzarella slice, add bacon, onions, mushrooms, peppers, handful of rocket and complete with a mayo smothered top


You can use mustard mayo as an alternative to pesto
