Soft & Chewy Chocolate Chip Cookies
A perfect melt-in-your mouth chocolate chip cookie recipe!
Ingredients
- 5oz/150g butter softened
- 4oz/125g caster sugar
- 1 egg lightly beaten
- Vanilla essence to taste
- 8oz/225g self-raising flour
- 3oz/75g plain flour
- 3½oz/100g plain chocolate drops

Preparation
Step 1
Heat oven to 220°C / 425°f / gas mark 7.
Step 2
Cream butter and sugar together until light and fluffy.
Step 3
Beat in the egg gradually, together with the vanilla essence.
Step 4
Sieve together the two flours and fold into the creamed mixture.
Step 5
Stir in the chocolate drops until well mixed through the dough.
Step 6
Turn out onto a lightly floured surface.
Step 7
Roll into a sausage shape about 2½cm /1" thick, cut the roll of dough into slices 2cm/¾" thick, place on a baking tray and flatten to about 5cm/2" in diameter.
Step 8
Bake for 10 minutes until golden brown.
Step 9
Sprinkle with caster sugar for a crunchy topping and leave to cool on a wire rack.
