  • Ingredients for the cake
  • 3 Granny Smith apples
  • 6 tbsp water
  • 25g butter
  • 3 tbsp olive oil
  • 100g caster sugar
  • 100g light brown soft sugar
  • Zest of 2 oranges
  • Juice of 1 orange
  • 75g orange marmalade
  • 200g self-raising flour
  • You will also need a greased loaf tin
  • Ingredients for icing
  • Juice of 1 orange
  • 100g icing sugar

Step 1

Preheat oven to 180C degrees gas mark 4
Peel & chop apples & heat in saucepan with water until soft then add butter
Sieve flour & add all ingredients into a large mixing bowl
Whisk for approximately 2-3 minutes
Spoon into your greased loaf tin, smooth the top slightly & bake for 50 minutes or until risen, golden & a skewer inserted in the middle of the cake comes out clean
Allow to cool in the tin for 15 minutes before turning out onto a wire rack
Mix icing ingredients until smooth then drizzle over cake while still slightly warm
