Apple and Raspberry Granita

Why cook apples when they come in liquid form?! With all the organic apple juice and fresh fruit on the market you can come up with some tasty apple granita in no time!
Ingredients
- 2-3 bottles of an organic apple juice of your choice
- 1 punnet of raspberries
- 1-2 apples (sweet or tangy depending on your taste)

Preparation
Step 1
Grate the apples (just the fleshy bit, not the core) and mix with the apple juice and the raspberries.
Step 2
Pour mixture into a flat tray and put in the freezer.
Step 3
Leave it for 50-60 mins and then stir to break up the ice crystals that have formed. Try not to crush the raspberries! Put it back into the freezer.
Step 4
Give it another 30 mins and stir again. Keep repeating until you have the consistency you want... (Perhaps 3-4 times depending on your freezer).
Step 5
Serve in a frosted glass with a sprig of mint and a slice of apple!
Experiment with other combinations of fruit! you could even try it with cider -there's lots cider flavours out there!
