Slightly salted whiting with pancakes, sea bream and piperade

Ingredients

  • 500g whiting fillets
  • 2 sea bream fillets
  • 200g salt
  • 20g sugar
  • 300g potatoes
  • 5 garlic cloves
  • 30g flour
  • 2 eggs
  • 1/2 l milk
  • 1/2 bunch parsley, thyme
  • 2 tbsp olive oil
  • 1 onion
  • 1 red and 1 green pepper
  • 25 cl tomato juice
  • salt and pepper

Preparation

Step 1

Place the whiting fillets in sugar and salt for 10 minutes. Rinse off the sugar and salt under cold water for 5 minutes.

Step 2

Peel, slice and cook the potatoes in milk with 4 cloves of garlic and the whiting for 15 minutes. Drain and mash with a fork.

Step 3

For the pancake mixture, add the flour, egg yolks, parsley and the egg whites (beaten until stiff). With a ladle, put small quantities in a hot non-stick pan and make the pancakes.
(to make perfectly round pancakes, you can cook them 2 minutes on each side, inside metal cooking rings).

Step 4

Peel and dice the peppers and the onion and cook in olive oil. Add the tomato juice, thyme and the last garlic clove, crushed, and cook for 10 minutes. Drain and leave to reduce until you get a syrupy liquid.

Step 5

Cook the sea bream fillets for 1 minute on the skin side.

Step 6

Place the sea bream and the pancakes onto dinner plates. Add the piperade of vegetables.
