  • Fresh whole sea bream (sea bass is a really popular choice as well!), approximately 300-400g
  • 2 tbs light soy sauce
  • 2 cloves of garlic, sliced
  • about 3-4 cherry tomatoes, or 1 regular tomato, sliced into wedges
  • good splash of shaoxing wine
  • 1/2 tbs vinegar
  • pinch of pepper
  • 1 bay leaf
  • 2 slices of ginger, thinly shredded

Place the whiting fillets in sugar and salt for 10 minutes

  • 500g whiting fillets
  • 2 sea bream fillets
  • 200g salt
  • 20g sugar
  • 300g potatoes
  • 5 garlic cloves
  • 30g flour
  • 2 eggs
  • 1/2 l milk
  • 1/2 bunch parsley, thyme
  • 2 tbsp olive oil
  • 1 onion
  • 1 red and 1 green pepper
  • 25 cl tomato juice
  • salt and pepper

Boil in the potatoes and garlic in salted water for 15 minutes or until tender

  • For the fish:
  • 2 Sea Bream fillets, pin-boned
  • 2 discs lemon parsley butter (Recipes/Extras)
  • 2tbsps white wine
  • 1tbsp capers
  • salt
  • freshly ground pepper
  • For the asparagus and potatoes:
  • 250g new potatoes
  • 1/2 lemon, chopped
  • bunch asparagus, trimmed
  • a few sprigs of thyme
  • 25g butter
  • drizzle olive oil
