Rhubarb and cinnamon crumble

- 100g rhubarb
- 2 tbsp sugar or honey
- 5g butter
- Cinnamon powder
- Crumble:
- 4 heaped tbsp flour
- 6 heaped tbsp sugar
- 1 pinch of salt
- 40g butter

Step 1
Peel and wash the rhubarb. Slice into pieces about 4 to 5 cm long. Melt 5 grams of butter in a pan. Cook the rhubarb for 2 minutes on medium heat. Sprinkle 2 tablespoons of sugar or honey and cinnamon on top and fry for another minute. Pour into a ceramic oven dish.
Step 2
Prepare the crumble topping: Combine the flour, sugar, pinch of salt and 40 grams of butter and knead with your fingertips. The dough should be dry and crumbly. Don't hesitate to leave a few lumps. Sprinkle over the rhubarb and bake at 180 degrees (gas mark 4) for 25 minutes. The crumble should be a nice golden colour when ready.
