Ingredients
- 5 - 10 sticks of rhubarb
- 4 tbsp water
- 8 tbsp caster sugar
- 100g softened butter
- 110g demerara sugar
- 180g plain flour

Preparation
Step 1
Preheat oven to gas mark 4
Step 2
Wash and peel the rhubarb, chop to bite size pieces
Step 3
Add the rhubarb to a pan on a low heat add the water and slowly add the caster sugar (add a little bit more water if needed) bring to the boil then allow to simmer whilst stirring for about 5 mins, then turn off the heat
Step 4
In a large bowl add the butter, flour and demerara sugar and rub together until it is all mixed and looks like breadcrumbs
Step 5
Taste the rhubarb mixture, you can reheat and add more caster sugar if not sweet enough
Step 6
Pour the rhubarb mixture into an oven proof dish the add the breadcrumbs mixture on top
Step 7
Cook for 35 - 45 mins serve immediately either by itself or with custard or fresh cream, be careful it will be very hot!
