Mustard, parmesan & herb-crusted leg of lamb

Preheat the oven to 180 degrees
- 1 leg of lamb (ask your butcher the exact cooking time)
- 40g parmesan, to grate
- 5 heaped tbsp strong mustard
- 1 bunch of parsley
- 15 chives, fresh or frozen
- 1 tbsp fresh coriander (or dried)
- 1 tbsp tarragon
- 20g breadcrumbs or stale bread, crumbled
- 2 cloves of garlic
Pisttachio-crusted rack of lamb with a duo of peas and beans in lemon confit

Beans and peas: Rinse the lemon confit under cold water
- 1 rack of lamb (4 ribs)
- 30g breadcrumbs
- 50g green pistachios
- A few sprigs of parsley
- 150g shelled peas
- 150g peeled broad beans
- 1/2 lemon confit
- 2 tbsp of olive oil
- Mint leaves
- balsamic vinegar
- butter
- Salt and pepper
- new mint leaves

Slow cooked lamb with beans and tomatoes

Soak the beans in water overnight
- - 500g of white kidney beans
- - 1 kg lamb collar
- - 2 onions
- - 6 fresh tomatoes
- - 4 cloves of garlic, salt, pepper, parsley
- - Bouquet garni (thyme and bay leaf)
