  • 50g light muscavado sugar
  • a pinch of salt
  • 200g plain flour
  • 2 1/2 teaspoons baking powder
  • 1 egg, whisked
  • 90ml milk
  • a generous dribble of almond essence
  • 80ml sunflower oil
  • flaked almonds
  • a dusting of icing sugar to decorate
