Almond goes wonderfully with apple and is a lovely alternative to the classic apple and cinnamon combo
- 2-3 apples (peeled, cored and chopped into small chunks)
- 100g caster sugar
- 50g light muscavado sugar
- a pinch of salt
- 200g plain flour
- 2 1/2 teaspoons baking powder
- 1 egg, whisked
- 90ml milk
- a generous dribble of almond essence
- 80ml sunflower oil
- flaked almonds
- a dusting of icing sugar to decorate
