Apple and Almond Muffins

Almond goes wonderfully with apple and is a lovely alternative to the classic apple and cinnamon combo. The muffins have a nice crunchy top and a light fluffy centre. Just how a good muffin should be in my opinion! This is a really easy recipe, quick to prepare and only takes 20mins to bake so you can whip up some delicious muffins in no time! Perfect for novice bakers and even kids!

Ingredients
- 2-3 apples (peeled
- cored and chopped into small chunks)
- 100g caster sugar
- 50g light muscavado sugar
- a pinch of salt
- 200g plain flour
- 2 1/2 teaspoons baking powder
- 1 egg
- whisked
- 90ml milk
- a generous dribble of almond essence
- 80ml sunflower oil
- flaked almonds
- a dusting of icing sugar to decorate

Preparation
Step 1

Preheat the oven to 200 degrees C and line a muffin tray with paper muffin cases.
Step 2

Mix all the dry ingredients together in a large mixing bowl.
Step 3

Add the whisked egg, milk, almond essence and oil and mix well to make a smooth mixture.
Step 4

Fold in the small apple chunks.
Step 5
Spoon the mixture into the muffin cases and sprinkle the flaked almonds over the top.
Step 6
Place on the middle shelf of the oven and leave to bake for 20 minutes.
Step 7
When they have started to brown on top, remove from the oven and leave to cool in the tray before dusting with icing sugar.
