- For the crumble topping:
- 60g plain flour
- 30g rolled oats
- 70g light brown sugar
- ½ tsp ginger
- ¼ tsp freshly grated nutmeg
- ½ tsp cinnamon
- For the sponge:
- 3 apples
- A squeeze of lemon juice
- 60g unsalted butter, at room temperature
- 50g caster sugar
- 50g light brown sugar
- 1 egg
- ½ tsp vanilla extract
- 140g plain flour
- 1tsp baking powder
- ¼ tsp salt
- 80ml whole milk
- 100g blackberries, cut in half

- 250g flour
- 15g yeast (preferably fresh)
- 25g sugar
- 125ml lukewarm water
- 30g butter (melted)
- 1 egg
- Pinch of salt
- 1tsp lemon peel
- 1kg apples
- 350g flour (Streusel)
- 200g sugar (Streusel)
- 1pack Vanilla sugar (Streusel)
- 200g butter (Streusel)
- 100g currants

Preheat the oven to 180 degrees C
- For the cake:
- 115g self raising (approx 1 cup plain flour + 2 tsp baking baking powder), sifted
- a pinch of salt
- 60g butter, softened
- 60g sugar
- 1 egg
- 1/2 tsp vanilla extract
- 1 tbsp milk
- 2 small Granny Smith apples, peeled and sliced thinly
- ground cinnamon
- For the crumble:
- 85g self raising (approx. 1/2 cup plain flour + 1 tsp baking powder)
- 60g sugar
- 30 butter
- 1 tbsp water for mixing
- gr0und cinnamon
