Pork - Spiced Pork Tenderloin in a Red Pepper Cream Sauce

- Ingredients for 4
- Tablespoon each of cumin seeds fennel seeds and fenugreek.
- A grind of pepper a pinch of dried crushed red chilli
- A pinch of dried thyme
- A grind of sea salt
- 500 gm pork tenderloin cut into half inch or 7mm slices
- 2 small red onions finely chopped
- Olive oil and a knob of butter
- 30 ml dry white wine
- About 30 ml of chicken stock
- 1 red pepper deseeded and chopped up into smallish squares
- 150 ml of single cream
- Bunch of fresh coriander chopped
Lardy Cake

A lighter lardy cake than most shop-bought lardy cakes, still very delicious though
- 450g strong white flour
- 1 tsp salt
- 14g instant yeast
- 75g lard
- 300ml water
- 75g butter
- 225g mixed dried fruit, including mixed peel
- 50g soft brown sugar
- cinnamon (optional)
- extra flour for dusting

- 100g rolled porridge oats
- 25g butter, diced
- 200g plain flour
- 200g plain wholemeal flour, plus extra for dusting
- 100g caster sugar
- 1 tsp bicarbonate of soda
- 1½ tsp mixed spice
- 1 tsp salt
- 50g raisins
- 50g sultanas
- 50g stoned dates, finely chopped
- 3 tbsp mixed peel
- 450ml buttermilk
- 3-4 tbsp demerara sugar

- 3 sweet potatoes (about 800g weight) –
- cut into 1cm thick slices
- 3 large carrots
- 3 large parsnips
- 1 leek
- 50ml oil
- 1 tablsp. fresh thyme
- ½ teasp ground cumin
- ½ teasp ground coriander
- 50g melted butter
- Good pinch smoked paprika
- ½ teasp. turmeric
- Yoghurt dressing
- 250ml Greek yoghurt
- Juice of 1 lime
- 2 cloves garlic crushed (optional!) *
- salt & pepper
- * could substitute with a little
- minced red onion or chopped chives
- Herb oil
- Big bunch of mint
- Small bunch parsley
- 100ml really good olive oil
