Ingredients
- 250g of dried wholemeal pasta
- frozen sweetcorn (lots)
- 10-12 sundried tomatoes
- handful of fresh basil
- pine kernels
- olive oil or pesto (even better home made pesto)
- lots of grated cheese to serve
- salt
- pepper

Preparation
Step 1
Put the pasta in a pan of salted water and bring to the boil
Add the sweetcorn
When pasta is cooked, drain and put back in the pan
Add the sundries tomatoes, chopping as you go so they are smaller
Add the fresh basil, ripped up to smaller pieces and pine kernels
pour a couple of gluts of olive oil or pesto over the pasta and stir, still over the heat to combine
Keep stirring for a couple of minutes and when heated, dish into bowls, add pepper to taste and a sprinkle of cheese
