Quorn mince and onion pie

Ingredients

  • 150g plain flour
  • 60g butter
  • 3 tbsp cold water
  • 2 x vegetable stock cube
  • seasoning
  • bag Quorn mince
  • olive oil

Preparation

Step 1

Cube butter and add to a bowl with the flour, using the rubbing in method combine (using the thumbs and forefingers rub the flour and butter into each other until totally combined)

Step 2

Add water and combine into a ball of pastry, you can add more flour if it's very runny or water if it's too crumbly

Step 3

Whilst the pastry refrigerates for 15 minutes wrapped in cling film, cube the onion and fry in olive oil until brown

Step 4

Add frozen Quorn and cook until browned

Step 5

Dissolve stock cubes in 500ml boiling water, add to mince and cook on high until reduced

Step 6

Grease small pie tins or ramekins and add mince mixture

Step 7

Roll out pastry and top each ramekin with a circle cut out using another ramekin as a template

Step 8

Prick the tops with a fork and cook at gas 6 for 30 mins and until pastry cooked through
