Ingredients
- 1 egg
- 240ml yogurt
- 80ml oil
- 1 tp vanilla extract
- 260g self-raising flour
- 100g sugar
- 1 1/4 tp baking powder
- 1/2 tp baking soda
- 1/4 tp salt
- 1 cup blueberries

Preparation
Step 1
Preheat oven to 190oC. Grease the muffin tins with butter.
Step 2
Whisk the egg. Add in yogurt, oil and vanilla extract. Mix well.
Step 3
In another bowl, mix in self-raising flour, sugar, baking powder, baking soda, salt and blueberries.
Step 4
Add the wet ingredients to the dry ingredients.
Step 5
Mix well.
Step 6
Using 2 spoons, 3/4 fill the muffin tins with the batter.
Step 7
Bake for 15-20min until lightly brown.
Step 8
Cool for 15min before serving.
