Fresh Blueberry Pancakes
Not too sweet, these are a wonderful way to make use of this delicious summer fruit, as well as a fantastic breakfast to wake up to! Frozen berries can be used as well. Preparation time is only 15 minutes, with 15 minutes set aside to cook. The mixture has to stand for one hour, but that opportunity can be used to get on with other tasks!

Ingredients
- 1 1/2 cups white flour
- 1/2 tsp. of salt
- 1 tbsp of baking powder
- 1 tablespoon of white sugar
- 1 tsp of vanilla extract
- 1 egg
- 1 cup of semi-skimmed milk
- 1/2 tablespoon of melted butter
- 3/4 cup of blueberries

Preparation
Step 1
In a large bowl, sift together the flour, baking powder, sugar, and salt.
Step 2
In a separate, smaller bowl, beat together the egg and the milk, as well as the vanilla extract.
Step 3
Combine and stir together the milk and egg mixture into flour mixture until smooth.
Step 4
Mix in the melted butter and fold in the blueberries. Let the mixture stand aside for 1 hour.
Step 5

Serve with topping of choice - whipped cream, maple syrup, or powdered sugar. If you have a waffle maker, the mix can be reused to make waffles - here is a picture of waffles stuffed with deconstructed raspberry trifle.
