- 100ml lemon curd
- 195g self-raising flour.
- 150g sugar
- 1/4 tp salt
- 1 1/2 tp baking powder
- 113g butter
- 2 eggs
- 1 1/2 tp vanilla extract
- 120ml yogurt/sour cream
- Whipped cream:
- 240ml cold heavy whipping cream
- 1 tbsp sugar
- 3 tbsp lemon curd

Preheat oven to 180oC. Grease the muffin tin with butter.
Mix flour, sugar, salt and baking powder together.
Add in butter, eggs, vanilla extract and yogurt. Mix everything well together.
Using 2 spoons, 3/4 filled the muffin tin with the batter.
Bake for 25min until appeared lightly brown. Cool the muffins for at least an hour.
Make a small hole at the centre of the muffin and fill the hole with lemon curd.
For the whipped cream, add in heavy whipped cream and sugar. Mix well.
Add in lemon curd and mix well.
Top the muffins with the whipped cream.
