Romantic Baked Rice pudding

This rice pudding is delicious and romantic with a lovely heart shape jam on top

Ingredients

  • 100g pudding rice
  • 450ml single cream
  • 450ml full-fat milk
  • 55g caster sugar
  • freshly grated nutmeg
  • Rind of 1 orange
  • 25g unsalted butter
  • 2 teaspoon strawberry jam

Preparation

Step 1

Preheat the oven to 150C/300F/Gas 2 and grease a 1.5 litre/2½ pint ovenproof dish with a little butter.

Step 2

Rinse the rice under cold water and place in the ovenproof dish. Add in the cream, milk, caster sugar, orange rind and grating of nutmeg in a medium saucepan. Stir well.

Step 3

Dot the butter over the top and place in the oven for 1½ hour until the pudding is creamy but not runny and the top is golden brown. Remove from the oven
and allow to rest for 10 minutes before serving

Step 4

Dish out the pudding into two glass dishes. Place a teaspoonful of jam in the centre of each dish and shape that into a heart.
