French Toast with compote

  • 5 eggs
  • 5 tbsp. milk
  • 1/2 tsp vanilla extract
  • 8 slices bread
  • 15g butter
  • cinnamon/mixed spice
  • sugar to dust
  • 1 1/4 cup blackberries
  • 2 tbsp. sugar
  • 2tbsp honey
  • pinch salt

Step 1

Add 1 cup of blackberries to saucepan with the sugar, honey and salt. Cook on low for 5-7 mins then smash fruit with back of the spoon. Add remaining blackberries for 1-2 mins then take off the heat.

Step 2

In the meantime add the extract and milk to the eggs-whisk. Dip the bread into the mixture and heat half of the butter with oil in a pan.

Step 3

Fry 4 slices at a time for 2 mins on each side (repeat). Sprinkle with the spice and sugar then serve with blackberry compote on top.
