  • 90g butter
  • 1 tsp vanilla extract
  • 1 cup brown sugar
  • 2 eggs
  • 1 cup mashed bananas
  • 1 cup plain flour
  • 1 cup self-raising flour

Preparation

Step 1

Preheat oven to 180'C. Beat butter, vanilla & sugar in a small bowl with an electric mixer until light and fluffy. Beat in eggs, one at a time.

Step 2

Transfer mixture into a large bowl, stir in banana then add sifted flours in 2 batches.

Step 3

Pour mixture into loaf tin and cover with a piece of foil. Bake for 40 minutes then remove the foil and bake for a further 30 minutes. Stand for 5 minutes then turn out onto a wire rack to cool.
