Preheat the oven to 180 ° C.
Drain the pineapple, reserving 4 tablespoons of juice. Arrange the pineapple in slices in 6 paper cases 10 cm in diameter. Place a candied cherry in the centre of each slice.
In a bowl, whisk the softened butter with sugar until the mixture is smooth and creamy. Stir in the eggs one by one and then the flour, grated coconut, the reserved pineapple juice and rum. Pour this batter in the paper cases on top of the pineapple slices. Bake for 25 mins. Leave to cool for a few minutes. Remove the cases by turning upside down - the cherry should be on top.
Turn the oven to grill position. Place the cakes on the oven rack, sprinkle with brown sugar and grill for 2 minutes. Serve warm or cold.
