Ingredients

  • 1kg tomatoes
  • pinch sugar
  • 1 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • 1 large onion, chopped
  • Thyme or other herb of choice
  • 2 garlic cloves, chopped
  • 1 tbsp tomato purée
  • 600ml vegetable stock
  • 2 tbsp mascarpone cheese (or use double cream as alternative)

Preparation

Step 1

Sauté onions, then add all ingredients apart from mascarpone cheese.
