Glazed Chocolate Cake


A moist and delicious chocolate cake covered with a simple glaze - no mess - no fuss cake that can be prepared in advance.

  • For the cake:
  • Butter – 150 g
  • Baking Powder - 2 teaspoon
  • Caster Sugar – 150 g
  • Eggs - 2
  • Plain Flour – 180 g
  • Cocoa Powder – 30 g (2 tablespoon)
  • Vanilla Extract – 1/2 teaspoon
  • Milk – 250 ml (1 cup)
  • Golden Syrup - 2 tablespoon
  • For the glaze and decoration:
  • Butter – 90 g
  • Golden Syrup - 1 tablespoon
  • Cocoa Powder – 30 g (2 tablespoon)
  • Blanched Almonds - 15

Step 1

Preheat oven to 190C/gas 5. Sift the plain flour, baking powder and cocoa powder. Cream the softened butter and caster sugar till light and fluffy.

Step 2

Add the eggs and vanilla extract. Add milk and golden syrup. Mix well. The cake mixture will be runnier than a usual cake mixture,

Grease and line two 7 inch round tins. Divide the mixture between the two tins equally.

Step 4

Bake for 15 to 18 minutes till the cake springs back to touch. Let the cakes cool before removing from the tins.

Step 5

For the glaze, melt the butter in a saucepan. Add the golden syrup and cocoa powder.

Step 6

Place one of the two cakes on a serving plate. Pour one third of the glaze over the cake. Place the second cake on top of the first one. Pour the remaining glaze over the top of the cake and slowly start moving the glaze around so that it covers the sides of the cake evenly. Place the blanched almonds and refrigerate for 1 hour till the glaze sets.

Use honey as a substitute for golden syrup.
