King Prawn Curry

Ingredients
- Garam Masala:
- 2 tbsp white poppy seeds
- 4 tbsp grated coconut
- 3cm piece fresh ginger, chopped
- 2 garlic cloves, chopped
- 2 tbsp coriander seeds
- 1 tsp cinnamon
- 2 cardamom pods
- 2 cloves
- 2 tbsp water
- Curry:
- sunflower oil
- 2 red onions, sliced
- 2 tsp chilli powder
- 2 tsp turmeric
- 1 tsp salt
- 1 tin chopped tomatoes
- 175g Cooked king prawns
- 2 sprigs fresh curry leaves
- handful fresh coriander leaves, to garnish
- steamed rice, to serve

Preparation
Step 1
Combine the ingredients for the garam masala and blend to a fine paste.
Step 2
Heat some sunflower oil in a pan until hot and add the red onion, frying until soft. Add the garam masala paste and fry for a minute or so until fragrant.
Step 3
Add the chopped tomatoes, salt, turmeric, curry leaves and chilli powder, mix well and simmer for 5 minutes or so, then add the prawns. Simmer until heated through without overcooking and serve with steamed rice and garnished with the coriander.
