Pasta with Sliced Chorizo in a tomato and pesto sauce with olives, sundried tomatoes and mozerella

Ingredients
- 1/3 of a chorizo sausage
- Pasta to serve two as per pack instructions
- 1 tbs green classic pesto
- Handful chopped green olives
- Handful chopped sundries tomatoes
- Tin of chopped tomatoes
- Some fresh basil
- 1 ball of mozerella
- 1 tbsp olive oil
- Salt and pepper

Preparation
Step 1
chorizo sausage sliced and fried off until slightly crispy in a little olive oil
Step 2
add a tin of chopped tomatoes a tablespoon of classic pesto, a handful each of chopped olives and sundried tomatoes season and heat gently for 10 mins
Step 3
Meanwhile cook the required amount of pasta
Step 4
Add the sauce to the cooked pasta and stir through cubed mozerella until just melting
Step 5
serve with a few fresh basil leaves
Serve with fresh crusty bread for extra indulgence
