Lovely creamy mash-topped fish pie.

Ingredients

  • Fag of spinach
  • Selection of fish (smoked haddock, cod, prawns, salmon) or fish of your choice approx 2lb
  • Cornflour
  • Milk
  • 2lb potatoes
  • Butter
  • Cheese optional

Preparation

Step 1

Lay spinach in bottom of large oven proof dish does not need to be pre-cooked.

Chop and boil potatoes til cooked then mash with butter do not add any milk as they will be too wet then.

Debone and skin fish then poach in a little milk until just cooked, drain and flake over spinach add prawns spread evenly over.

Make a white sauce with milk butter and conrflour and pour over fish.

Cover with mashed potatoes.

Cook in oven until nice and golden and crunchy on top.

For extra richness sprinkle with grated cheese before baking.
