  • 2 carrots
  • 1 celery stick
  • 3 spring onions
  • 1 tsp fennel seeds
  • 1 tsp oregano
  • 1 fresh chilli
  • 4 good quality sausages (80% pork content)
  • 1 tin of chopped tomatoes
  • 4 tbsp of balsamic vinegar
  • 2 garlic cloves, basil leaves
  • pasta for 4

In a food processor finely chop carrots, celery and spring onions, add fennel seeds, oregano, chilli and sausages. Put ingredients in a large pan and cook for 10 mins, add crushed garlic, balsamic and tomatoes and cook for another 10 mins. At the same time put on the pasta and cook for 10-12 mins.
