Mediterranean Vegetable Pesto Ravioli


Ravioli with Mediterranean Vegetables & Homemade Pesto Sauce

  • - 500g Ravioli
  • - Basil pot
  • - Olive Oil
  • - Grated Cheese
  • - 3 Tomatoes
  • - 400g Mushrooms
  • - 2 Courgettes (optional)
  • Optional Extras
  • - Grated Cheese to serve
  • - Salad to serve

Step 1

Slice and quarter courgettes

Step 2

Fry on high heat until soft (approx. 20 minutes)

Step 3

Whilst courgettes are cooking, prepare pesto;

Step 4

Blend basil leaves

Step 5

Add olive oil and grated cheese & blend again

Step 6

Add tomatoes to courgettes 15 minutes into cooking

Step 7

Boil water for pasta & cook pasta for approx. 1-2 minutes according to packet

Step 8

Whilst cooking pasta, remove courgettes from heat (once cooked) and add mushrooms & cover (will cook even with no direct heat)

Step 9

Once pasta is cooked, reheat vegetables slightly until mushrooms are 'al dente' & add pesto to vegetables

Step 10

Drain pasta & combine with vegetables

Serve with grated cheese of choice.
