Quick cheesecake

A very unique and quick take on a cheesecake ideal for a really quick dessert or even finger food at a buffet.

  • 8 Digestive or Milk chocolate biscuits
  • 200g of soft cream cheese.
  • 50g of icing sugar
  • Topping of your choice. I use Strawberry Jam
  • Cream to serve with (optional)

Preparation

Step 1

For this you need a biscuit cutter the same size or slightly smaller than the digestive biscuit.

Step 2

Place your soft cheese and icing sugar in a bowl mix together with a wooden spoon until mixture becomes creamy.

Step 3

Place the biscuit cutter over the digestive and pour on the cheese mixture. be sure to share out the mix evenly with the other biscuits. do not fill to the top.

Step 4

put 4 tbls full of jam mix into a bowl and place in the microwave for roughly 30 seconds to one minute. once its nice and runny pour it over the top of the cheese cake to top not too much though and be careful its hot!

Step 5

allow to cool in the fridge whilst you have dinner or till your ready.

Step 6

serve and enjoy.

Because the biscuit isnt crushed they re easy to handle. If you fancy making your own biscuits then even better. If you really want to get fancy try topping with fresh strawberries and chocolate sauce perfect for a dinner date ;)
