Ingredients
- 100g softened butter, plus extra for greasing
- 175g light brown soft sugar
- 1 egg
- 100g self-raising flour
- 50g ground almonds
- 5 tbsp cocoa
- 150ml Guinness
- For the cream
- 200ml double cream
- 25g icing sugar
- Splash Champagne (optional!)

Step 1
Heat oven to 180C
Grease and line baking tray.
In a mixing bowl, put the butter, sugar, egg, flour, ground almonds, bicarbonate, cocoa and Guinness all together, beat well.
Pour the mix into your cake tray, evenly and cook for 20-25 mins.
Cool for 15 mins, then remove from tins and cool again.
Whip the double cream with the icing sugar add a splash Champagne if you're feeling fancy.
When the mix is thick spoon the cream onto the cakes and sprinkle with cocoa.
