- 9 Seville Oranges
- 1 gallon water
- 3 1/2 lb sugar

Preparation
Step 1
Wash and dry the oranges, then peel half of them very thinly. Leave the rest as they are.
Step 2
Cut all oranges in half and scrape the pulp into the pan with the water.
Step 3
Add the peeled off rinds to the mixture.
Step 4
Let stand for 8 or nine days, stirring it well two or three times each day.
Step 5
Strain through a hair sieve before adding the sugar.
Step 6
Stir frequently until the sugar has dissolved, then put it in a cask and let stand for a year. It should not be bunged down tightly at first.
