- 2 tbsp oil
- 4 spring onions
- 1 garlic clove
- 420g tin of chickpeas
- 8oz/250g spinach per person
- 2 tbsp tomato puree
- 1 tbsp mild curry paste

Step 1
Heat the oil and fry the spring onions and garlic for 2 minutes
Step 2
Add the rest of the ingredients and stir fry until they are hot, about 2-3 minutes
Step 3
Serve immediately
