  • 2 tbsp oil
  • 4 spring onions
  • 1 garlic clove
  • 420g tin of chickpeas
  • 8oz/250g spinach per person
  • 2 tbsp tomato puree
  • 1 tbsp mild curry paste

Step 1

Heat the oil and fry the spring onions and garlic for 2 minutes

Step 2

Add the rest of the ingredients and stir fry until they are hot, about 2-3 minutes

Step 3

Serve immediately
