Tricolour Raita


Make your dinner table stand out, with three different fresh, flavoured and colourful Raita.

  • 1-2 cups of thick yogurt
  • chilled
  • 1 medium Carrot
  • 1 medium Potato - boiled and peeled
  • 1 small Cucumber - peeled
  • 1 Spring onion bulbs
  • Salt to taste
  • 1-2 a pinches of Red chilli powder
  • A pinch Black pepper powder
  • 1 medium bunch of spinach leaves - blanched and chopped
  • 1/4 cup of chilled milk

Step 1

Tricolour Raita - Step 1

Roughly cut the carrot, put into a chopper and chop.

Cut potato and cucumber into small cubes.

Chop spring onion bulb.

Reserve a little carrot, potato and spinach for garnishing.

Step 2

Mix spring onion and potato in a bowl.

Put carrot in a 2nd bowl and cucumber in a 3rd bowl.

Add salt to all three bowls.

Add red chilli powder to carrot, pepper powder to cucumber and potato.

Add spinach to cucumber and mix.

Step 4

Tricolour Raita - Step 4

Whisk yogurt, add milk and whisk till smooth.

Put equal amount of yogurt into the three bowls and mix well.

Put all three in individual serving bowels/glasses.

Step 5

Tricolour Raita - Step 5

Garnish carrot raita with reserved carrot, potato raita with reservd potato and palak raita with reserved palak.

Chill for minimum 30 minutes in the fridge, before serving.
