- 100g plain flour
- pinch of salt
- 25g trex/lard
- 25g butter (block)
- 1-2 tablespoons cold water
- 100g jam/marmalade

Preparation
Step 1
Pre-heat the oven to 180'C.
Step 2
Sieve the flour and salt into a bowl.
Step 3
Cut the fat into small pieces and rub into the flour and salt using your fingers, until it looks like bread crumbs.
Step 4
Add 1 tablespoon of water to the mix and mix together with a fork until it forms a dough.
Step 5
Place the dough onto a floured worktop and gently roll out.
Step 6
Cut the dough using the cutters and then put them in a tart tin.
Step 7
Add a spoon full of jam to each piece of pastry.
Step 8
Bake for 10-15 minutes, until the pastry is golden brown.
Step 9
Take the tin out of the oven and allow to cool for 5 minutes.
Step 10
Serve.
