Beat the butter until it turns white. Add the icing sugar, egg yolk and orange blossom water while continuing to beat.
Crush the almonds. Fry them lightly in a dry pan. Add them to the mix.
Add the flour, stirring until the dough is souple. Take a spoonful of dough. Make a ball. Flatten slightly. Repeat until all the dough is used up.
Place in a preheated oven at 170° C for ten minutes. Remove from the oven, pour a few drops of orange blossom.
While they're still hot, dip the cookies one by one in the icing sugar. Serve on a plate and sprinkle with icing sugar, passed through a fine sieve.
