- 500 ml of double cream

Step 1
Cut the chicken breasts in half and then in fairly large chunks.
Cut your tarragon and place on a plate. Cover with the juice of half a lemon (the tarragon must be well moistened with lemon for it to stick to the chicken).
Step 2
Roll the chicken in the tarragon. Take the skewers and pierce the diced chicken, coated with tarragon. (I use large skewers that I cut in half). For 5 chicken breasts you will be able to make 8 small or 4 large skewers. Cook the chicken in a pan until golden brown. Remove from the pan and pour the cream into the pan with a little lemon juice and the rest of tarragon (if any). Present the skewers on a plate and top with cream.
